In our Pasternaria, we celebrate 300 years of craftsmanship. The Heuft family from the Rhineland, the seventh generation of stove builders, spent four weeks assembling our wood-burning stove from the famous Beller Tuff and customised it precisely to our needs.
Tuff, a volcanic rock, stores heat so well that it has been used in oven construction for many centuries. When we decided to make our own bread one of the pillars of Casa Caminada, the decision in favour of the wood-fired oven was quickly made. Firstly out of a sense of tradition and secondly because of the special flavour that firing the oven directly gives the bread.
Of course, you can't just switch on a wood-fired oven at the touch of a button. You have to get to know it, you have to feel when the right moment has come to start baking. Here - and in many other matters relating to bread - Zurich baker and entrepreneur Jens Jung has provided us with valuable advice. We also share his passion for sourdough bases, long-leavened doughs and untreated flour.
In addition to a wide range of breads, brioches and croissants, which our guests can enjoy for breakfast, the Casa Caminada bakery also offers the traditional Grisons nut cake.
